You get the idea. I guess what I’m saying is, My Big Fat Greek Wedding is useful in a lot of ways.
So are Greek salads!
There’s something so right about tomatoes, cucumbers, red onions, and feta cheese. Add some homemade Greek dressing and it’s perfection. For the salad I chopped up a red onion, a cucumber, two tomatoes, a couple of Kalamata Olives, some carrots (because they were starting to look sad and neglected in the fridge) and some Romaine lettuce. I tossed to combine and added some Feta cheese.
For the dressing I whisked together Dijon mustard, anchovy paste (I’m slightly obsessed), and some mayonnaise. I then added some cider vinegar and dried oregano and stirred to combine. While whisking, I drizzled in some extra virgin olive oil to emulsify the dressing. I finished off with some salt and pepper to taste and I was done! I poured the dressing over the salad and tossed everything together.
This is a fresh, tangy salad with an easy and delicious salad dressing made from things you probably already have in your pantry/fridge. The dressing would be great over some cold pasta and grape tomatoes for a quick pasta salad, too.
